HOW TO BAKE SIMPLE AND SPECIAL VANILLA CAKE (8" by 3")
Ingredients:
Margarine/Butter- 350g
Sugar- 150g-200g
Eggs- 7 eggs
Flour- 350g
Baking powder- 1½ teaspoon
Nutmeg- 1 teaspoon (optional)
Vanilla flavour- 1 teaspoon
Preservative (sorbic acid)- 2[¼] teaspoon

Note: For moderate sugar, use 150g for this recipe and for a sweeter taste, use 200g.

Baking procedure:
1. Prepare your baking pan. Grease the pan with margarine and dust with flour and set aside.
2. Measure flour, baking powder, nutmeg, preservative (sorbic acid) and sift into a clean dry bowl except the sorbic acid in other for it to remain active. Check this link HERE- Measurements for the proper way of taking measurement of ingredients.
3. Measure margarine/butter, sugar and flavour into the mixing bowl and start creaming with the aid of a stand mixer/hand mixer gradually on low speed or by hand using a wooden spoon and increase the speed with time.
4. Keep creaming until the mixture is light, fluffy, increased in size and almost white.
5. Break the eggs into another bowl and beat/whisk lightly, then add gradually into the creamed mixture and continue mixing until properly incorporated.
6. If using stand mixer, switch it off and detach the mixing bowl, then gradually add the mixed dry ingredients into wet mixture and fold in using metal spoon or wooden spoon until both portions are evenly mixed.
7. Preheat your oven for about 5-10 mins then pour the batter into the prepared baking pan and bake in a moderately hot oven for 45 mins-1 hr 30 mins.
8. Insert a skewer at the centre of the cake to check if it is well baked and if it comes out clean, it means your cake is ready 😀
9. Bring out the cake, put off your oven and turn the cake upside down onto a rack to cool and after few minutes turn it upright to cool completely.

You can have some in cupcakes with buttercream or ice-cream... Oh! Mouth-watering.
